Nothing beats a bit of comfort cooking on a dreary bank holiday Monday afternoon, which gave the excuse to finally plan to cook a rhubarb dish, having mentioned it as one of this months best fruit currently in season. I decided to make a good old fashioned crumble. I liked the addition of root ginger and star anise to put a twist on the traditional crumble and it was served perfectly with a good dollop of madagascan vanilla custard. Perfection. I also made an ad hoc raspberry crumble for Archie as I wasn’t sure he would be too keen on the flavours of the rhubarb, ginger and star anise. All I did was use up some raspberries from the freezer and made double of the crumble topping. Hopefully they taste as good as they look and smell!
